Ingredients:
- 1 pound fresh shrimp, peeled and deveined
- 1 cup freshly squeezed lime juice
- 1 cup freshly squeezed orange juice
- 1 small red onion, finely chopped
- 1 jalapeño pepper, seeded and finely chopped
- 1 bell pepper (any color), finely chopped
- 1/4 cup chopped cilantro leaves
- Salt and pepper to taste
- 12 small tortilla cups (store-bought or homemade)
- Avocado slices, for garnish
- Lime wedges, for serving
Instructions:
- Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and rinse the shrimp under cold water to stop the cooking process.
- Chop the cooked shrimp into small pieces and place them in a large bowl.
- Pour the freshly squeezed lime juice and orange juice over the chopped shrimp. Stir to combine, ensuring all the shrimp is coated in the citrus juices. Cover the bowl and refrigerate for at least 30 minutes to allow the shrimp to marinate and “cook” in the acidic juices.
- After marinating, drain excess liquid from the shrimp, leaving just a little for flavor.
- Add the finely chopped red onion, jalapeño pepper, bell pepper, and chopped cilantro to the shrimp. Season with salt and pepper to taste. Mix well to combine.
- Spoon the citrus shrimp ceviche mixture into small tortilla cups, dividing it evenly among them.
- Garnish each ceviche cup with a slice of avocado and a sprig of cilantro.
- Serve immediately, accompanied by lime wedges for squeezing over the ceviche just before eating.
