Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chopped spinach
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup chopped black olives
  • 1/4 cup crumbled feta cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 cup chicken broth
  • 1 lemon, sliced
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket, being careful not to cut all the way through. Season the inside of each pocket with salt and pepper.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  4. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Remove the skillet from heat and stir in sun-dried tomatoes, black olives, crumbled feta cheese, dried oregano, and dried basil. Mix until well combined.
  6. Stuff each chicken breast with the spinach and feta mixture, dividing it evenly among them. Secure the pockets with toothpicks if needed.
  7. Place the stuffed chicken breasts in a baking dish. Pour chicken broth over the chicken and lay lemon slices on top.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
  9. Once done, remove the toothpicks and discard them. Garnish the stuffed chicken breasts with chopped parsley before serving.
  10. Serve the Mediterranean Stuffed Chicken Breast hot, accompanied by your favorite sides such as roasted vegetables, mashed potatoes, or a fresh salad.
