Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup chopped spinach
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup chopped black olives
- 1/4 cup crumbled feta cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 cup chicken broth
- 1 lemon, sliced
- Fresh parsley, chopped, for garnish
Instructions:
- Preheat your oven to 375°F (190°C).
- Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket, being careful not to cut all the way through. Season the inside of each pocket with salt and pepper.
- In a skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- Remove the skillet from heat and stir in sun-dried tomatoes, black olives, crumbled feta cheese, dried oregano, and dried basil. Mix until well combined.
- Stuff each chicken breast with the spinach and feta mixture, dividing it evenly among them. Secure the pockets with toothpicks if needed.
- Place the stuffed chicken breasts in a baking dish. Pour chicken broth over the chicken and lay lemon slices on top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
- Once done, remove the toothpicks and discard them. Garnish the stuffed chicken breasts with chopped parsley before serving.
- Serve the Mediterranean Stuffed Chicken Breast hot, accompanied by your favorite sides such as roasted vegetables, mashed potatoes, or a fresh salad.
