Ingredients:

  • 1 lb (450g) breakfast sausage, casings removed
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cups (200g) sliced mushrooms
  • 2 cups (200g) spinach leaves
  • 6 slices of bread, cubed
  • 1 ½ cups (150g) shredded cheddar cheese
  • 8 large eggs
  • 1 ½ cups (360ml) milk
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or butter.
  2. In a large skillet, cook the breakfast sausage over medium heat, breaking it up with a spatula, until browned and cooked through. Remove the sausage from the skillet and set aside.
  3. In the same skillet, add diced onion and bell peppers. Sauté until softened, about 5 minutes. Add sliced mushrooms and cook for another 3-4 minutes until they release their moisture.
  4. Stir in the spinach leaves and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
  5. Spread the cubed bread evenly in the bottom of the prepared baking dish. Top with the cooked sausage, sautéed vegetables, and shredded cheddar cheese.
  6. In a separate bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
  7. Pour the egg mixture evenly over the ingredients in the baking dish, ensuring everything is coated.
  8. Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown.
  9. Remove from the oven and let it cool for a few minutes before slicing. Garnish with chopped fresh parsley if desired.
