- 1 lb (450g) breakfast sausage, casings removed
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups (200g) sliced mushrooms
- 2 cups (200g) spinach leaves
- 6 slices of bread, cubed
- 1 ½ cups (150g) shredded cheddar cheese
- 8 large eggs
- 1 ½ cups (360ml) milk
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or butter.
- In a large skillet, cook the breakfast sausage over medium heat, breaking it up with a spatula, until browned and cooked through. Remove the sausage from the skillet and set aside.
- In the same skillet, add diced onion and bell peppers. Sauté until softened, about 5 minutes. Add sliced mushrooms and cook for another 3-4 minutes until they release their moisture.
- Stir in the spinach leaves and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
- Spread the cubed bread evenly in the bottom of the prepared baking dish. Top with the cooked sausage, sautéed vegetables, and shredded cheddar cheese.
- In a separate bowl, whisk together the eggs and milk until well combined. Season with salt and pepper.
- Pour the egg mixture evenly over the ingredients in the baking dish, ensuring everything is coated.
- Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing. Garnish with chopped fresh parsley if desired.
