Ingredients:

For the Caramel:

  • 1 cup granulated sugar
  • 1/4 cup water

For the Flan Custard:

  • 4 large eggs
  • 1 can (14 ounces) sweetened condensed milk
  • 1 can (12 ounces) evaporated milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Place a large baking dish or roasting pan in the oven and fill it halfway with water. This will be the water bath for baking the flan.
  2. In a small saucepan, combine the granulated sugar and water for the caramel. Heat over medium-high heat, swirling the pan occasionally, until the sugar dissolves.
  3. Once the sugar has dissolved, continue to cook without stirring. Swirl the pan occasionally to ensure even caramelization. Cook until the caramel turns a deep amber color, which should take about 7-10 minutes.
  4. Once the caramel reaches the desired color, immediately pour it into the bottom of a 9-inch round cake pan or flan mold, swirling to coat the bottom evenly. Be careful as the caramel will be extremely hot. Quickly tilt the pan to coat the sides with caramel as well. Set aside to cool and harden.
  5. In a large mixing bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt until smooth and well combined.
  6. Pour the custard mixture over the cooled caramel in the cake pan.
  7. Carefully place the cake pan into the preheated oven, using oven mitts, and bake for 50-60 minutes, or until the flan is set around the edges but still slightly jiggly in the center.
  8. Once the flan is done baking, remove it from the water bath and let it cool to room temperature. Then, cover it with plastic wrap and refrigerate for at least 4 hours, or overnight, to chill and set completely.
  9. To serve, run a knife around the edge of the flan to loosen it from the pan. Place a serving platter over the top of the pan and carefully invert the flan onto the platter, allowing the caramel to drizzle over the top.
